HOW TO MAKE ALMOND CHEESE - a Holidays treat


Okay, for some reason I love all things made with almonds, and if someone had told me years ago that today I would be playing in the kitchen with new recipes, I would of say “sure yeah, mmm no way Jose.”

During my years of being vegan, I didn't even realize they were all sorts of recipes "replacing" the goods from the dairy section at the grocery store. I am not 100% vegan anymore, but I do LOVE making my food and the reason why, it is because of all the extra ingredients they use out there, and because I love cooking and experiment in the kitchen. It also allows me to know precisely the kind of nutrients my body will be absorbing.

This is a surprisingly easy recipe to make, and it only takes 7 ingredients. You can serve the cheese with crackers, veggies, or even in sandwiches!!

Go ahead, be brave! And you will be amazed at how easy to make this was.

Ingredients

  • 1 cup almonds - peeled

  • 3 tbsp. olive oil

  • 2 tbsp. fresh lemon juice

  • 1 garlic clove

  • 1/3 cup water

  • 1/2 tsp. nutritional yeast

  • 1/4 tsp. salt

  • Mix herbs - I used Herbs De Provence, but any would do

Instructions

  • soak almonds in water overnight - make sure the water covers the almonds for about 1 inch

  • next day, drain and rinse the almonds

  • place the almonds, olive oil, lemon juice, garlic, water, nutritional yeast and salt to a food processor and mix until smooth. You may have to pause and scrape the sides from time to time.

  • once you get a creamy and smooth consistency, remove the mix, and if it is too wet, you may have to place it in a colander with a container underneath to drain all the excess liquid. This process requires refrigerating the cheese overnight.

  • put the mix in an airtight container and refrigerate for at least 2-3 hours.

  • remove from fridge, form a ball and roll over the mix herbs of your choice.

Store in the fridge for about 4 or 5 days.

Serve this tasty cheese with crackers of your choice, veggies, sandwiches...or just a spoon.

Note: if you need to remove the almond peel, it should be pretty easy, but it would take you a few extra minutes. After you soak them overnight, you just need to squeeze the almond between your fingers and the almond will fly right out. Have fun with this!
