Summer days are rolling in here in Colorado, and the best way to cool our bodies off is by consuming cooling fruits and vegetables. And in this recipe we combine it with basil, cucumber, and lemon, providing you with ingredients rich in water, fiber, Vitamins B & C, anti-oxidants, anti-inflammatory and soaked with nutrients.
I’ve always encouraged my friends and clients to substitute ingredients, to experiment, as they may have ingredients at home that they would like to utilize before they go bad, or just want to try something new. In this case, you could try fresh mint instead of basil…blend, taste, add more, serve, and Salud!
Ingredients (makes 2-4 servings)
1/2 large cucumber (peeled)
1/4 lemon (peeled)
2 cups watermelon
3-5 medium basil leaves or mint leaves (or until you reach the desired taste)
1 cup ice
1 cup of water
add more water or ice if needed
wash all the ingredients and cut them into small pieces
blend until smooth
taste and serve
